A variation of the traditional Genoese pesto with the addition of almonds and cherry tomatoes, for an intense but at the same time delicate taste, for demanding and competent palates.
Dedicated and interpreted by Bradamante. Depicted in the act in which he binds Brunello to take possession of the magic ring.
This type of pesto is, in fact, a variant of Pesto alla Genovese. In fact, the ships coming from Genoa docked in Trapani and the sailors spread the recipes of their pesto. The cooks of Trapani customized the Genoese pesto, adding almonds instead of pine nuts and enriching it with the best Sicilian tomatoes.
Ingredients: tomato, extra virgin olive oil, garlic, almonds, basil.
