A Piedmontese company that adopts crops with reduced environmental impact and rediscovers the most traditional and valuable varieties of the precious cereal. Innovation and tradition is the imperative that distinguishes the production of this Italian company.
The Company Gli Aironi
The experience gained in five generations of rice cultivation has given its best fruits in the Grange Vercellesi where the Perinotti family has dedicated its existence to improving the cultivation conditions of the Pracantone Estate.
Ours was a different choice: investing in quality, experimenting and adopting crops with reduced environmental impact and rediscovering the most traditional and valuable varieties of the precious cereal.
Until a few years ago, Italian rice-growing was based on the production of quantity and the indiscriminate use of chemical fertilizers and pesticides, which compromised the quality of the harvest and endangered the survival of the animal species typical of these marshy areas. Only the introduction of a less forced type of agriculture meant that the endangered Grey Herons returned to the rice paddies. Michele Perinotti wanted to dedicate Risi&co, the company he runs with enthusiasm and passion, where he carries out his vocation with continuous research, to these majestic birds: to bring on the tables of foodies from all over the world the protagonist of the perfect risotto and all the many interpretations with #almost the rice.
Today the skills in the company have expanded with the involvement of new partners dedicated to selection, research and production in the field and commercial communication of the product. With a continuous constant: the passion for our work!
One of the key elements that characterizes our production is the attention for the techniques with which to work and preserve the products. An example of this is the IpoDry® system: designed and patented by us, it is a packaging method that allows to maintain the nutritional and organoleptic characteristics of our products, without the use of preservatives. IpoDry® avoiding the contact of food with air, and therefore the oxidation and absorption of moisture, guarantees its freshness for two years.
We took our best Carnaroli and smoked it with cherry wood for 14 hours. The result is a rice with soft woody notes, intense on the nose and pleasantly delicate on the palate. It is a product that can be used for the preparation of risottos outside the box, but also as an accompaniment for meat, fish, game and vegetables to which it gives contrasts of aromas and...
